At Cliftons, we believe that every meal we serve should be both memorable and sustainable. Our commitment to sustainability goes hand in hand with our purpose of creating remarkable experiences, together. That means making choices every day that reduce waste, support our communities, and care for the environment.
Here are Five Key Methods Cliftons Manage Food Waste:

Smart Planning From the Start

Reducing waste begins well before an event takes place. Thanks to our event management and CRM systems, our chefs know exactly how many meals to prepare. This approach means we serve precisely what’s needed, cutting down on unnecessary food waste compared to a traditional buffet or walk-in dining.

Menus Designed With Intention

When our chefs design menus, they think ahead. Whether it’s catering for a small meeting or a large conference, our menus are thoughtfully designed to be scalable and portion controlled.  This flexibility allows us to serve the right amount without excess.

Getting Creative In the Kitchen 

When we produce larger volume dishes, we get creative.  Take our pumpkin risotto, for example. When this dish is prepared in larger volumes, any extra portions are transformed into crispy arancini for future events.  It’s one of the many ways our chefs bring Innovation and Passion (two of our FLIPIT values) to life, showing how much they care about making the most of every dish.

Composting For a Cleaner Future

We’re also taking steps to reduce what goes to landfill. At some venues, like Sydney, we work closely with building management to collect organic waste separately. It’s weighed, measured, and composted – a great example of Teamwork in action, where our venue staff and partners collaborate to create something positive for the planet.

Giving Food a Second Life 

When we do have food that’s no longer needed, we do our best to find it a good home. Through food rescue organisations, we donate surplus food to those in need whenever possible.  For us, Integrity is about doing the right thing – and ensuring that good food doesn’t go to waste is one way we live this value.
